Gaitania / Colombia - Anaerobic Natural - Omni

Named after a village in the Planadas municipality in the department of Tolima, Colombia. This anaerobically processed coffee comes from the indigenous community Nasa Wesx. The Nasa Wesx have organic certification for all of their coffee and dedicate their work to conservation and improving the environmental quality of their land. The cherries are selectively hand-harvested to ensure only the ripest are picked. Afterward, they undergo a 40-hour anaerobic fermentation. The beans are then dried in the sun until they achieve the desired moisture level.
